Eughenes Nero d’Avola is a wine with strong identity that expresses the personality of the king of Sicilian grapes. It is genuine in its combination of soft tannins and fresh red fruit. It’s perfect with meat ragù dishes.
The grape, at the highest ageing, is hand- harvested early in the morning or late in the evening. Juice and skins are stored in cool location at 26,5° C and then transferred in steel tanks for maceration. Fermentation lasts 12-15 days. The wine is aged in inox at controlled temperature of 18°-20°C and then, in bottle for at least 3 months.
